  • olive or avocado oil
  • ground bison (90/10)
  • chipotle peppers in adobo (canned)
  • pineapple chunks
  • garlic
  • chili powder
  • ground cumin
  • oregano
  • cinnamon

For the spicy avocado cream, you’ll need:

  • a small avocado
  • sour cream or greek yogurt (if you use sour cream, pick one that’s probiotic to benefit your gut)
  • a small jalapeno
  • a garlic clove
  • squeeze of fresh lime juice
  • olive or avocado oil
  • honey
  • salt and pepper

How to Make the Bison Taco Meat

  1. Add the chipotle peppers, pineapple, and garlic to a food processor and blend until smooth.
  2. Heat a large skillet over medium-high heat. Add olive or avocado oil. When hot, add the ground bison and brown on one side for about 3 minutes.
  3. Add the chili powder, cumin, oregano, and cinnamon to the meat in the pan. Break apart the meat and continue stirring until almost cooked.
  4. Add the chipotle sauce to the pan with the meat and cook for another roughly 5 minutes until the sauce thickens.
While the meat is cooking, you can work on the avocado cream.

  • 2/3 cup pineapple chunks

  • 1 small avocado
  • 1/2 cup sour cream or greek yogurt
  • 1 small jalapeno seeded and membranes removed
  • 1 clove garlic
  • 1 tsp lime juice
  • 1 tsp olive or avocado oil
  • 1 tsp honey
  • salt and pepper generous pinch
