Ingredients
For the Bison Taco Meat:
2tspolive or avocado oil
1lbground bison (90/10)
4ozchipotle peppers in adobo (canned)roughly 2-3 peppers
2/3cuppineapple chunks
3clovesgarlic
2tspchili powder
1tspground cumin
1tsporegano
1/4tspcinnamon
For the Spicy Avocado Cream:
1small avocado
1/2cupsour cream or greek yogurt
1small jalapenoseeded and membranes removed
1clovegarlic
1tsplime juice
1tspolive or avocado oil
1tsphoney
salt and peppergenerous pinch
Instructions
For the bison meat:
Add chipotle peppers, pineapple, and garlic to a food processor and blend until smooth.
Heat a large skillet over medium-high heat. Add olive or avocado oil. When hot, add the ground bison and brown on one side for about 3 minutes. Add the chili powder, cumin, oregano, and cinnamon. Break apart the meat and continue stirring until almost cooked.
Add the chipotle sauce to the pan with the meat and cook for another roughly 5 minutes until the sauce thickens.
For the spicy avocado cream:
Add all cream ingredients to a food processor and blend until smooth.
For serving:
Serve bison meat on warmed tortillas, topped with the spicy avocado cream. Garnish with lime wedges, chopped cilantro, and purple cabbage slaw.
