Ingredients
For Salad:
1headred leaf lettuce, chopped to bite size
1headromaine lettuce, chopped to bite size
1/2small red onion, thinly sliced
114-oz canquartered artichoke heartsdrained and roughly chopped
112-oz jarroasted red peppers, drained and diced
1/3cuppine nuts, toasted
For Red Wine Vinaigrette:
1/2cupextra-virgin olive oil
1/4cupred wine vinegar
1tspItalian seasoning
3/4tspdijon mustard
1/2tspkosher salt
1/2tspblack pepper
1/4tspgarlic powder
1/3cupgrated parmesan (optional)
Instructions
After chopping red leaf and romaine lettuce, make sure they are dried well. Also ensure that artichoke hearts and roasted red peppers are drained well to avoid a watery salad.
Whisk all vinaigrette ingredients in a bowl, or add them to a jar and shake vigorously.
Add salad ingredients to a large salad bowl. Pour the vinaigrette over the salad and toss well to combine.
Serve immediately with shaved parmesan if desired.
