Ingredients
1tbspapple cider vinegar
3tbspolive or avocado oil
1lime, juiced
1tspdijon
1tbsphoney
1/2tspgarlic powder
1/2tspsalt
black pepper, to taste
1/2medium head of purple cabbagecored and sliced thin
1cupshredded carrots
1/3cupchopped cilantro
1small jalapenoseeded and diced
Instructions
Whisk or shake the vinegar, oil, lime, dijon, honey, garlic powder, salt, and pepper in a small bowl or jar.
Add cabbage, shredded carrots, chopped cilantro, and diced jalapeno to a bowl. Pour dressing over the top and toss well to completely coat the slaw.
